This recipe has come to the rescue many many times. It's packed with flavor and totally adjustable to your heat preferences. I love spicy, but the rest of my family....not so much. Get your sauce together. Add all the ingredients to a bowl and then set aside.
Then you want to get a pot of water starting to boil — you don’t want to put in your noodles until just before you need them ready.
Add avocado oil to your frying pan on medium high heat. When it’s hot, add the shallot and garlic and cook for 3 minutes. Then add the beef and green chilies. Cook until all sides of the steak are browned. While stirring the beef around, this is the time to add your rice noodles to the boiling water and cook for 5 minutes. Add the red pepper to the steak and cook for 5 minutes. Then the noodles should be ready —Now to put it all together—Add the bok choy, noodles, and sauce to the pan and toss to combine. Let this cook together for a few minutes.
Add peanuts and lime slices and dish it up. You could absolutely add some heat with some extra sriracha too.
