Banana Coffee Cake

I always love when we have banana bread in the morning for school days. It fills my kids up and isn't cereal. They for sure have cereal too....but they love when they can have banana bread too! This one is our current favorite! The cinnamon mix in the middle of the banana cake make it so delicious and moist! YUM!

Banana Bread

Prep time: 10 minutes | Cook time: 45-50 minutes

Ingredients

  • 4 bananas (you can use less if you have less, but at least 2)
  • 2 Tbsp brown sugar
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 Tbsp butter milk
  • 3 tbsp brown sugar
  • 2 tsp cinnamon

Instructions

Preheat oven to 350 degrees. Grease 2 bread pans.

Mash bananas, brown sugar, vanilla, and cinnamon together. Set aside.

Cream butter and sugar together, add eggs and buttermilk and beat together. Add dry ingredients and mix until combined. Add in mashed banana mixture and mix until combined again.

In a separate bowl, mix together the brown sugar and cinnamon.

In the bread pans, put enough batter in to cover the bottom of the pan. Sprinkle a spoonful of the brown sugar/cinnamon mixture on top. Then add more batter to the top and then finish with another scoopful of brown sugar/cinnamon mixture. Remember, there are 2 loaves…so do this with 2 separate loaves.

Bake 350 degrees for 45-50 minutes or until knife entered in the center comes out clean.
