Apple Butter Fritters
My husband loves these....and I am not actually a huge fan from just any donut shop. But these....these are amazing! Just one bite and I knew this was a recipe to be handed down to future generations. Yes, they're that good!! The original recipe is from simpleisgourmet.com and we adapted it a little bit to add more apple flavor.
Apple Butter Fritters
Prep time: 8-12 hours | Cook time: 30 minutes
Ingredients
Overnight sponge:
- 100g sourdough starter
- 300g all purpose flour
- 60 g sugar
- 180g warmed whole milk
- 1/4 cup melted butter
After ferment:
- 1 egg
- 1 small apple, diced
- 1 tsp baking soda
- 1/2 tsp Cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1/2 tsp salt
- 1 Tbsp apple butter
Glaze
2 cups powdered sugar
1 tsp vanilla
1 Tbsp apple butter
1-2 Tbsp milk
Avocado oil - 1-2 inches in pot
Instructions
To make the overnight sponge, just mix all of the sponge ingredients in a large bowl.
Cover and let ferment overnight (8-12 hours).
In the morning, heat the oil to 350 degrees. While that is heating, add egg, diced apple, cinnamon, nutmeg, clove, salt, baking soda, and apple butter to your overnight sponge. Mix everything by hand until well combined.
Then make the glaze- combine all glaze ingredients and stir - add more milk if you want it thinner, but I keep mine thick because it melts on the hot fritter.
When you are ready to make the fritter, take a 1/4 cup batter and drop into oil. Then take your potato masher and push down on the fritter to make it more flat. Cook for 2 minutes on one side, flip, and then cook for 2 minutes on the other side.
Remove onto a paper towel lined cooling rack and drizzle glaze immediately. Repeat steps until all fritters are fried and glazed.
