Hawaiian Banana Muffins

Banana, Coconut, pineapple and chocolate? YES PLEASE! These were an experiment that turned out so yummy! Moist, and full of all kinda of different flavors. So good!

Hawaiian Banana Muffins

Prep time: 10 minutes | Cook time: 18 minutes

Ingredients

  • 2 cups flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 2 eggs
  • 1/2 cup sugar
  • 1 6 oz pineapple juice
  • 1 stick softened butter
  • 2 ripe bananas
  • 1 tsp vanilla
  • 1/2 cup unsweetened coconut
  • 1/2 cup mini chocolate chips

Instructions

Combine flour, salt, baking soda, and cinnamon, set aside.

Cream together sugar and butter (or skip this because I did 😋) add eggs, pineapple juice, bananas, vanilla, and mix well.

Add dry ingredients until all combined. Add in coconut and chocolate chips.

Scoop into a greased muffin pan.

Bake at 350 degrees for 18 minutes.
