Mexi Tater Tot Casserole

Mexican Tater Tot Casserole is a new spin on an old classic recipe and this one is, in our opinion, WAY better. Slightly spicy, but you can absolutely control the spicy or add more if your family likes more! These also make fantastic breakfast burritos if you have leftovers! Just add scrambled eggs and a tortilla and you have dinner and breakfast the next day! You won’t regret trying this awesome recipe!

Mexican Tater Tot Casserole

Prep time: 10 minutes | Cook time: 30 minutes

Ingredients

  • 24 oz. Bag tater tots
  • 1 onion
  • 1-2 bell peppers (red or yellow)
  • 2 cloves garlic
  • 1 lb ground turkey or beef
  • 1 can Rotel tomato with green chilies
  • 1/2 cup salsa
  • 1 can black beans
  • 2 cups cheddar cheese
  • Taco seasoning below

Taco seasoning:

  • 4 tsp Lawry's
  • 2 tsp paprika
  • 1 tsp cumin
  • 1/4 tsp cayenne (more or less depeding on your spice level)

Instructions

Preheat the oven to 400°. Baked tater tots for 15 minutes.

Heat olive oil in a skillet. Add onion and pepper. Saute until soft, about 5 minutes. Add garlic for 1 minute.

Add meat and brown. Drain and then add back to the pan with 1/2 of the taco seasoning, Rotel, salsa, and black beans.

Grease 9x13 p.m. with cooking spray and add meat mixture to the pan.

Top with tater tots, the other half of the taco seasoning, and cheese to the top.

Bake at 375° for 30 minutes.
