Rueben Irish Nachos
Our family is not a big corned beef family, but we LOVE a good Rueben. We love a good sandwich, but rueben ingredients can be so good in other ways too! We love our rueben sliders on yummy Hawaiian rolls! We have also done rueben egg rolls and rueben pizza! It is all so good and different! We tried these this year and my kids were begging me to make them again and again! They are soooo good!!
Rueben Irish Nachos
Prep time: 20 minutes | Cook time: 30 minutes
Ingredients
- 24 oz frozen waffle fries
- Swiss Cheese sauce (below)
- 1 1/2 cups chopped corned beef
- 1 cup sauerkraut, squeeze out the extra liquid
- 1 cup sour cream
- 1/2 cup thousand island
- Chives
Cheese sauce:
- 5 Tbsp butter
- 1/3 cup flour
- 3/4 tsp garlic salt
- 2 cups whole milk
- 1 Tbsp Dijon mustard
- 1 cup shredded Swiss cheese
Instructions
Bake the waffle fries according to package directions.
Meanwhile, make cheese sauce and fry bacon. Cheese sauce: melt butter, add flour and make a paste. Add garlic salt, stir, and then slowly add milk. Once thick, add Dijon mustard and Swiss cheese and stir to combine. Set aside.
Once the waffle fries are baked and slightly crispy, you are ready to put together the nachos. Add cheese sauce, corned beef, bacon, and sauerkraut. Add back to the oven for 15 minutes. Mix sour cream and thousand island while it is finishing up. Add your thousand island sour cream mixture and chives to the top of your nachos and serve hot.
