Quick Cilantro Lime Rice

Who doesn’t love Mexican Food? I know it is one of everyone’s favorites in our house. This rice is super simple side dish for tacos or it can be a main star in burrito bowls! Love how quick and easy it is to throw together and kick any dinner up a notch. I adapted the recipe to a quicker version of Magnolia Table’s Cilantro Lime Rice. I always end up forgetting about the starting the rice until last minute…so adapting their recipe made it so I could still include this yummy rice dish in our meal!

Quick Cilantro Lime Rice

Prep: 5 minutes | Cook time: 10 minutes

Ingredients

  • 2 tbsp butter + 2 tbsp
  • 3 cups white rice
  • 3 cups chicken broth
  • 1 tsp lime zest
  • Juice from half of a lime
  • Chopped cilantro
  • 1/4 tsp salt and pepper

Instructions

Melt butter in the sauce pan, add rice and toast.

Add chicken broth , bring to a boil and let that sit until fluffy.

Melt butter, add cilantro, salt, pepper, zest, and lime juice.

Stir and add to the fluffy rice.
