Spicy Roasted Sweet Potatoes
Growing up, I hated sweet potatoes. I was never one to go for the marshmallow topped sweet dish at Thanksgiving and truthfully, that was the only way I knew about them. We never had them for dinner and always chose the regular potato, which are also amazing, but I have fallen in love with sweet potatoes through this recipe. I crave the spicy mix of these savory sweet potatoes. They are the perfect side dish for any barbeque recipe or any grilling recipe. If we are using our smoker that night, I’ll throw them in a cast iron and put them on there for some extra smokiness or if we aren’t, they are still great in the oven! I always adjust the cayenne pepper based on if the kids are eating with us, or if it’s an adults only dinner.
Spicy Roasted Sweet Potatoes
Prep: 5 minutes | Cook time: 30-40 minutes
Ingredients
- 2 sweet potatoes (make sure to double seasoning for more)
- 2 tsp salt
- 1 tsp garlic powder
- 1 tsp paprika
- 1/4 tsp chilli powder
- 1/4 tsp cumin
- 1/4 tsp cayenne (or more for spicier)
- 1/4 cup coconut oil or avocado oil
Instructions
Peel and dice your potatoes.
Line cookie sheet with parchment paper or throw potatoes in your cast iron.
Mix spices together. Add oil to potatoes and then your seasonings. Stir around.
Bake at 400 degrees for 30-40 minutes or until fork tender.
