Sausage and Tomato Rigatoni

This is one of my husband’s favorite pasta’s. It was uncontested before we went to Italy. Then we had to recreate some things from there…but he still is obsessed with this pasta and will eat every little piece of the leftovers.

Sausage and Tomato Rigatoni

Cook time: 20 minutes

Ingredients

  • 1 lb sausage (we use a pork sausage...add heat if you want)
  • 1/2 onion (I've used both yellow and red onion)
  • 1 8oz jar tomato paste
  • 1/2 bottle of Sundried Tomato Vinaigrette (we use Kraft)
  • 1 8oz can tomato sauce
  • 1 lb rigatoni (cook according to package)
  • Top with parmesan, parsley, and red pepper flakes

Instructions

Brown your sausage and add your onion until both are browned and translucent. Add your tomato paste and let that cook until the tomato paste turns a rust color. Add your sun-dried tomato vinaigrette and your tomato sauce. Let that all simmer until your pasta is cooked.

Add your pasta and it is ready to eat.

Top with parmesan, parsley and red pepper flakes for a little heat.
