Tomato Gnocchi
I always have this ready to throw together on a busy week night. And that is for sure the season that we are rolling into! Less than 30 minutes and you and your family will feel good about this one!
Tomato Gnocchi
Prep time: 5 minutes | Bake time: 20-30 minutes
Ingredients
- 1 lb Italian sausage
- 1/2 onion, diced
- 2 cloves garlic
- 1/2 cup white wine or chicken broth
- 1 14 oz petit diced tomatoes
- 1 cup heavy cream
- 1 lb uncooked potato gnocchi
- 1/2 cup Parmesan cheese
- 1-2 cups spinach
- Fresh basil
Instructions
Saute the sausage and onion together until browned. Add garlic and stir. Add the white wine (or chicken broth) and let that cook for a minute. Add your diced tomatoes, heavy cream and gnocchi.
Stir around and then cover and let it cook on medium heat for 5 minutes. Check to see if the gnocchi is soft and done. If not, let it cook for a minute or two more. Add the spinach and stir around until wilted. Add Parmesan and fresh basil.
Let cook until it slightly thickens and then it is ready to serve! Enjoy!
