Shepherd’s Pie
If you look up a cozy meal in the dictionary, I swear it should say Shepherd's pie. Mashed potatoes, with yummy veggies and meat underneath definitely warms my belly and my heart ❤️
This idea came from how much we love Chrissy Teigen’s Sleepy Time Stew— we love that recipe so much that I tried to adapt some of the flavors into this Shepherd’s pie. Try it out!
Shepherd's pie
Prep time: 30 minutes | Bake time: 25-30 minutes
Ingredients
2 lbs ground chuck
Salt and pepper
2 Tbsp butter
1/2 onion
Jalapeno (seeds in if you don't mind a little spice)
4 cloves minced garlic
2 Tbsp flour
1/4 cup tomato paste
2 cups beef broth
2 Tbsp Worcestershire
1 tsp sugar
2 tsp parsley
1 tsp thyme
1 cup frozen peas and carrots
1 can white northern beans Mashed potatoes
5 lb golden Yukon potatoes
8 oz cream cheese
1 stick of butter
1/2 cup heavy cream
2 cloves minced garlic
1 tsp Lawry's seasoning salt
1-2 cups Cheddar cheese to top
Instructions
First get your potatoes in a pot of boiling water and let these cook while you work on the meat mixture.
Brown meat then drain and set to the side.
Melt butter in the same skillet and add onion and jalapeno. Cook for 3 minutes and then add your garlic. Add the meat back to the skillet. Add flour and tomato paste, stir and cook for a couple minutes.
Then add beef broth, Worcestershire, sugar, parsley and thyme. Stir that around and then add your beans, peas and carrots. Let simmer while you finish the potatoes.
Blend potatoes with cream cheese and butter. Add heavy cream, garlic and Lawry's and mix well.
Putting it all together:
Put the meat mixture in a 9x13. Top with dollops of the mashed potatoes and spread around add shredded cheddar cheese on top.
Bake at 400 degrees for 25-30 minutes.
