Mini Fruit Pizza Cups
These are one of my favorite things to make when it gets close to Spring or for Easter! They are the perfect little bite to pop into your mouth and have the best flavor of sweet with the sugar cookie and freshness with the fruit. Plus they look absolutely adorable and are sure to impress!
Mini Fruit Pizza Cups
Prep time: 3 hrs | Cook time: 15+ minutes plus cooling time
I like to make the dough the night or two before so that I can put these together quickly the day I want them.
Ingredients
Sugar Cookie
- 1 1/2 cup salted butter
- 1 1/2 cup sugar
- 2 Eggs
- 1 1/2 teaspoon Vanilla
- 3 1/2 cups Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoon Salt
Frosting:
- 8 oz cream cheese (softened)
- 4 Tbsp (softened)
- 1 1/4 c powdered sugar
- 1 tsp vanilla
Fruit:
- Strawberries, kiwi, and blueberries- or whatever fruit you love!
Instructions
Cream butter and sugar together. Add eggs and then vanilla. Combine all dry ingredients, add to the wet ingredients until combined.
Place in a plastic wrap ball and place in fridge for at least 3 hours.
Scoop out (this is easy with a melon scooper) and roll into balls.
Place in your mini muffin pan. Bake at 350° for 15 minutes.
Let cool slightly, place divots in the top and then pop out of the pan to cool on a cooling rack.
For the frosting, mix cream cheese and butter together. Add vanilla and powdered sugar until all combined.
I like to add the frosting to a plastic bag and cut off the corner to make it easy to add to the cups.
Once cool, add frosting to your sugar cookie cups and then add your favorite fruit on top!
