Penne Alla Vodka

Pasta is always a good idea. This is a favorite and one that I try to always have the ingredients in house. It even inspired us to grow San Marzano tomatoes in our garden every year and can them! You’ll be surprised how quickly this comes together and uses so few ingredients! Definitely a family favorite!

Penne Alla Vodka

Prep time: 5 minutes | Cook time: 30 minutes

Ingredients

  • 1 lb penne
  • 1/2 medium onion (diced)
  • 7-10 oz pancetta (my favorite pancetta comes in a 5 oz package...so I do 2 of those)
  • 7 oz vodka
  • 28 oz Italian peeled tomatoes (look for san marzano)
  • Basil
  • 3/4 cup heavy cream
  • Parmesan

Instructions

Add olive oil to a pan and warm. Add onion and pancetta- fry on medium heat until onions are golden and pancetta is crispy.

In a separate bowl, add tomatoes, salt, and pepper. Crush gently (I use my hands). Set aside.

Once onions and pancetta is ready, pour vodka in the pan and cook for 2-3 minutes.

Add crushed tomato to the pan and stir around. Cook for 15-20 minutes.Start cooking your pasta while this cooks.

After 15-20 minutes, break apart basil, add to the pan and stir around. Add cream to the pan and stir until it's all combined.

When pasta is done, spoon pasta into the pan and add about 1/2 cup pasta water. Let cook for a few more minutes.

Top with Parmesan and more fresh basil.
