Smashed Potachos
I might seriously have dreams about how good these were. Crispy potatoes with taco toppings?? YUM! These would be awesome as an appetizer for a big group party too! The crispy potatoes and taco toppings? AMAZING!
Smashed Potachos
Prep Time: 30 minutes | Cook time: 20 minutes
Ingredients
- 3-5 lbs baby potatoes (I didn't have any so used golden Yukon cut up and it still worked great!
- 1 lb ground turkey/hamburger
- 1 can rotel tomato and green chilli
- Our favorite taco seasoning
- Black beans
Optional add ons....but you should do all of it 🤤
- Guacamole
- Sour cream
- Cilantro
- Red onion
- Black olives
- Jalapenos
- Hot sauce
Taco Seasoning
- 8 tsp Lawry's seasoning salt
- 4 tsp paprika
- 2 tsp cumin
- 2 tsp garlic powder
- 1/4-1/2 tsp cayenne
Instructions
To start, put your potatoes in a large bowl- cover the potatoes with water and then cover with a lid- microwave for 15-20 minutes or until fork tender- You can also boil the potatoes until fork tender.
While that's going, brown your meat in a pan, add half of the taco seasoning, Rotel and black beans.
Once your potatoes are tender, drain them from the pan. Next, take a baking sheet and add oil (we do avocado oil). Add the potatoes on top of the oil and smash the potatoes with the bottom of a cup. Add more avocado oil on top of the potatoes and the other half of taco seasoning.
Place the baking sheet on the absolute bottom of the oven and bake at 450 degrees for 20 minutes (flip half way).
Take the potatoes out of the oven and add cheese, the meat mixture, red onion, cilantro, olives and then top with guacamole, sour cream, jalapenos, and hot sauce.
