Rueben Sliders

Corned beef…..we’re just not a corned beef family. Now, add corned beef to a rueben in any shape or form…..we can eat that all day any day. I especially love to whip these out around St. Patty’s day. That way we can still have a fun festive St. Patrick’s Day dinner….but without a big hunk of corned beef that we don’t know what to do with.

Rueben Sliders

Prep time: 5 minutes | Cook time: 15 minutes

Ingredients

  • One package Hawaiian rolls
  • Thousand Island dressing
  • 1 lb corned beef
  • 8 oz shredded Swiss cheese
  • 1 1/2 cups sauerkraut
  • 4 Tbsp melted butter
  • 1/4 tsp minced onion
  • 1/4 tsp garlic powder

Instructions

Cut Hawaiian rolls in half and put the bottom half in a 9x13. Top with thousand island dressing, corned beef, shredded swiss cheese, and sauerkraut. Put the top of the Hawaiian rolls back on.

Melt butter and add minced onion and garlic powder to the melted butter. Spread over top of the rolls and cover with aluminum foil.

Bake at 350° for 15-20 minutes.
